Happy last first day of school! It’s hard to believe that today marks the beginning of my last semester of college, but I’m going to try to savor every moment of it while I can. I’m also going to try to savor every bite of my Fakeout Takeout Asian Chicken Lettuce Wraps!
Ever hear how a hot cup of lemon water and turmeric in the morning is like a cure-all? It's true. Lemon is packed with the ever necessary Vitamin C that we all need during the winter, especially when a college campus becomes a breeding-ground for sickness, and it also contains citric acid which helps with digestion and breaking down food. And what about turmeric? Not only does turmeric add a bright color and warm spice to everything you use in it, but it also has powerful anti-inflammatory effects and antioxidant properties. I mean, what more could you ask for? That's why I've teamed up with my favorite Superfoods company, Healthworks, to bring you my fun version of a glass of lemon water with turmeric, a.k.a my Turmeric Lemon Poppy Seed Muffins. You knew I had to whip up something sweet.
Everyone’s favorite Buff chick dip just got a makeover with this HEALTHY (yeah, you read that right) Buffalo Chicken Mac and Cheese! Most hot sauces are mad with garlic and onions, which aren't low FODMAP, and I've been missing that extra kick in all of my meals. Luckily, I discovered that Tabasco sauce is only made out of 3 ingredients - distilled vinegar, red pepper, and salt. Now, I'll obviously be adding it to everything, including this Buffalo Chicken Mac and Cheese!
My favorite present from the holidays? A donut pan. Yup. Call me crazy, but you'll also be calling me to try my Chocolate Glazed Donuts. A lot of people doubted that I'd be able to pull this one off, but then I made them try a donut and they immediately shut up. They're that good. Make the haters eat donuts, I always say. As always, they're gluten-free, grain-free, dairy-free, and refined-sugar free, which is extremely dangerous because it convinces you that it's okay to eat two (or five) in one sitting.
