Corn-Free Cornbread

I’m so excited for this recipe, like I haven’t been able to stop talking about it and thinking about it kind of excited. With Thanksgiving coming up, and since corn literally destroys my insides and rips them apart (fun stuff), I dedicated myself to creating the perfect corn-free cornbread. Yup. You read that right. Cornbread, without the corn. I’m serious.

Corn-free Cornbread will 10000% be making an appearance at my family’s Thanksgiving table this year, and I hope it does at yours, too. I also plan on creating a stuffing recipe out of it in the next few days, so stay tuned for that. You’re not going to want to miss out.

Since I created and shared this recipe for Corn Free Cornbread a few years ago, it has easily become my most popular recipe – and for good reason. It’s best served with melted ghee and/or honey. It makes for a delicious side, and it can even be used for your Thanksgiving stuffing, too!

Corn-Free Cornbread

Ingredients

  • 1 cup 1 almond flour

  • 1/4 cup 1/4 coconut flour

  • 1 tsp 1 baking soda

  • 1/2 tsp 1/2 salt

  • 3 3 eggs

  • 1/2 cup 1/2 almond milk

  • 3 tbsp 3 honey

  • 4 tbsp 4 melted ghee

  • Optional:
  • chives, bacon

Directions

  • Preheat oven to 325F.
  • Combine the wet ingredients and the dry ingredients in two separate bowls, then slowly whisk the dry into the wet.
  • Once smooth, pour the batter into an 8×8 parchment lined baking dish, spreading evenly.
  • Bake for 20-22 minutes depending on your oven.

  1. I think this is amazing!! No, not cornbread but pretty damn close, esp. if you use sugar in your cornbread! The almond and coconut flour add that sweetness. Thanks for coming up with this.
