Grain-Free Hint of Lime Tortilla Chips

There’s really nothing in this world that can compare to some chips and salsa, or even chips and guac. I’ve been craving Tostitos Hint of Lime Tortilla Chips, so, naturally, I took it upon myself to figure out how I could make my own version of the classic. My take is a cross between a Dorito and tortilla chip, and it’s kind of the best thing ever. I’m not biased, obviously. Not only is it gluten-free, but it’s also entirely grain-free. There’s no corn, no additives, and to make it even healthier, these grain-free hint of lime tortilla chips chips are baked rather than fried. So, go grab some salsa and guac because you’ve just found your new favorite snack.

INGREDIENTS:

1 cup of almond flour

1 egg white

Zest of 2 limes (1 if you want it to be less “limey” – yes, that’s a word now)

1 tsp paprika (plus extra to sprinkle over the top)

1/2 tsp chilli powder

1/2 tsp cumin

1/2 tsp salt – I always top mine with more salt before they go into the oven

1/2 tsp pepper

DIRECTIONS:

  1. Combine all the ingredients in a bowl until they form a dough-like consistency (You’ll have to use your hands to bring the dough together into a ball). 
  2. Place your dough onto a sheet of parchment paper and place another sheet of parchment paper on top
  3. With a rolling pin, roll out your dough until it is smooth, flat, and thin 
  4. Take the top piece of parchment paper off, and cut your dough into triangles 
  5. Transfer to a baking sheet and bake at 325 for about 12 minutes, or until crispy and golden brown
  6. You can always double the recipe to have more chips! Serve with some salsa and guac or just snack on the chips on their own! enjoy! xo
