Everyone’s favorite Buff chick dip just got a makeover with this HEALTHY (yeah, you read that right) Buffalo Chicken Mac and Cheese! Most hot sauces are mad with garlic and onions, which aren't low FODMAP, and I've been missing that extra kick in all of my meals. Luckily, I discovered that Tabasco sauce is only made out of 3 ingredients - distilled vinegar, red pepper, and salt. Now, I'll obviously be adding it to everything, including this Buffalo Chicken Mac and Cheese!
My favorite present from the holidays? A donut pan. Yup. Call me crazy, but you'll also be calling me to try my Chocolate Glazed Donuts. A lot of people doubted that I'd be able to pull this one off, but then I made them try a donut and they immediately shut up. They're that good. Make the haters eat donuts, I always say. As always, they're gluten-free, grain-free, dairy-free, and refined-sugar free, which is extremely dangerous because it convinces you that it's okay to eat two (or five) in one sitting.
There's really nothing in this world that can compare to some chips and salsa, or even chips and guac. I've been craving Tostitos Hint of Lime Tortilla Chips, so, naturally, I took it upon myself to figure out how I could make my own version of the classic. My take is a cross between a Dorito and tortilla chip, and it's kind of the best thing ever. I'm not biased, obviously. Not only is it gluten-free, but it's also entirely grain-free. There's no corn, no additives, and to make it even healthier, the chips are baked rather than fried. So, go grab some salsa and guac because you've just found your new favorite snack. And you don't even have to fill guilty about eating them all.
It looks like chocolate ice cream, it tastes like chocolate ice cream, but it’s chocolate banana “nice” cream!
I needed a sweet treat to get me through the rest of finals and this was just that. It makes me feel like I’m eating a big old bowl of ice cream, just without the sugar and the dairy. The recipe is actually really simple and you can customize it to however you like it! Want more chocolate? Do you, boo. Want to throw in some PB2 and make peanut butter chocolate ice cream? Genius.
Is your mind blown? Because mine is.
You're not dreaming. You're definitely reading this right. Healthy Mac & Cheese Bites are no longer just a figment if your imagination. They're here, they're real, and they're out-of-control good.
I teamed up with Banza Pasta to bring you these magic little Mac & Cheese bites. Here's the thing - I personally can't eat Banza right now at this stage in my Crohn's recovery due to the fact that it contains xantham gum. HOWEVER, and this is a big however, I used to eat Banza pasta all the time and know so many people who still do. As one of the healthiest alternatives to regular pasta on the market, Banza's chickpea pasta works for so many others and has a huge benefit for so many people. It's full of protein, fiber, and obviously, contains no gluten. I will only ever endorse companies that I believe in, and while I personally cannot eat Banza quite yet on this phase of the SCD diet, I still want to create recipes that can be enjoyed by all of YOU.
With that said, let's get to the good stuff. Oh, and can we just talk about that cheese pull?
I know it’s not fair to play favorites, but this chocolate fudge recipe might actually be one of my favorites of all time. I’ve been home for break for a week and have already had to make multiple batches for my friends and family. They all think it tastes just like a Reese’s, but healthier, obviously, and can’t stop eating it.
I had some leftover spaghetti squash from dinner last night and wanted to figure out a fun and creative way to use it for breakfast. I was inspired by Choosing Balance to put my spin on these spaghetti squash fritters. They just might be my new favorite breakfast of choice. Spaghetti squash for breakfast - who would have thought?! Move over latkes because I'm totally making these for the holidays, too!
I woke up with a fever this morning, so I'm definitely not feeling too hot. Luckily, I have this Fall Harvest Chili Soup to keep me warm. It's the perfect marriage between a soup and a chili for when you're indecisive and just can't decide between the two. It's also made with my favorite Kettle and Fire Bone Broth which will help boost my immune system and kick this cold in no time. I made it all in my crock pot, so it saves so much time and energy!
I did it. I finally made my own hummus! I don’t know why I was so hesitant to make it for so long after adding chickpeas back into my diet, because it turned out to be the easiest recipe ever. It’s perfect for some healthy Sunday football snacking, too. All my fellow low fodmappers out there can understand the struggle of not being able to find a hummus at the store that doesn’t have any garlic in it. At 1/4 of a cup, well-drained, chickpeas are considered low fodmap. While they’re not SCD legal, I’m at a point in my recovery where I am able to add foods back into my diet that I can tolerate! It’s a learning process and entirely based on how YOU feel. And I feel like I’m going to go enjoy my hummus with roasted carrots thanks to FODMAPeveryday .
